The rum cocktail from Little Bird in Fairhope, AL, transforms the classic Hurricane into something unexpected and elegant.

Ingredients
- 2 oz. Orange oleo
- 3 oz. Fresh lime juice
- 4 oz. Planteray 3 Star rum
- 4 oz. Planteray O.F.T.D rum
- 6 oz. Overbrewed passion tea
- 4 oz. Coconut milk
Instructions
- Combine all the ingredients except the coconut milk in a container.
- In a separate container, pour the milk in, then slowly pour the cocktail mixture in.
- After fully mixed, slowly stir to make sure milk min incorporated.
- Let sit for at least four hours or until you can see separation, ideally overnight.
- Using a mesh strainer lined with cheesecloth, or a chemex coffee filter, slowly filter the cocktail mixture into a container.
- At first it will filter through quickly, once it has slowed down to a slow dip transfer the strainer to a new container and pour the mixture that was already been through the filter, back through again.
- Let strain for 24 hours, discard the filter.
