Brooklyn’s Widow Jane Distillery, led by Head Distiller Sienna Jevremov and the blending team, has announced the seventh edition of The Vaults. This is an annual, limited release of older bourbon from the distillery’s reserves, finished in unusual casks.
This year’s finishing casks are made from oak harvested from forests surrounding Amfilochia, a mountainous city on the Mediterranean coast of Greece. The wood used in barrel assembly was air-seasoned for 1-2 years and imparts notes of wild honey, mountain sage and dried fig, the distillery reports.
On the nose is dark mulled fruit, burnt sugar, salty olive oil pastries and forest aromatics, according to distillery notes, rounded out by complementary floral and citrus notes.
“Each edition of The Vaults is a thrilling experience for me,” says Jevremov. “It affords me the opportunity to explore the enigmatic flavors of our older whiskey stocks and to craft a composition woven together into something entirely new. For 2025, I chose Greek oak as the finishing wood having been inspired by my many journeys to the region. Walking among its landscapes, the aromas have lingered with me ever since — haunting me in the most delightful way.”

As is the case with all Widow Jane whiskeys, The Vaults 2025 is non-chill filtered and is proofed with water sourced from the Rosendale Mines of upstate New York.
The liquid aged a minimum of 15 years. Bottled at 99 proof, The Vaults 2025 is available nationwide for the suggested retail price of $249.99 per 750-ml. bottle.
