Corralitos Negroni 

This Negroni riff from Hotel Paradox in Santa Cruz, CA, uses a watermelon reduction syrup for a fresh fruity twist.

Ingredients

  • 1 ¼ oz. Dry gin
  • 1 oz. Lillet Blanc
  • 1 oz. Campari
  • ¼ oz. Watermelon reduction

Instructions

  • Combine all ingredients and stir with ice.
  • Strain into rocks glass over one large ice cube or into coupe glass.
  • Garnish with watermelon twist.

Notes

For Watermelon reduction:
Blend and strain one medium sweet watermelon. Add ½ cup sugar and a pinch of salt. Bring to simmer and reduce for one hour
