American hard cider has yet to come into its own, but that’s changing quickly, thanks to adventurous cider-makers inspired by a mix of European tradition and craft-beer ingenuity. The diverse apple crops in the U.S. means that American cider could eventually be defined by region, apple name or even by farmer.
